This has been my go-to recipe for throw together dinners as well as when delivering a meal to a friend. I used lean ground turkey meat, whole wheat pasta and swap out the soup cream with greek yogurt. Place the squash on a sheet pan and drizzle with the olive oil, salt, and pepper and toss well. The roasted cubes of butternut squash are then layered on a base of baby spinach, with chopped avocado, fluffy quinoa, and a squeeze of lemon juice.
