  1. It's of peanuts /moongphali.
  2. You need of chana roasted.
  3. It's of cashews /kaju.
  4. You need of coconut chopped dry slices (optional).
  5. It's of golden raisins /kishmish.
  6. You need of curry leaves /kadi patta.
  7. It's of mustard seeds /rai.
  8. It's of cumin seeds / jeera.
  9. You need of sesame seeds white /safed til.
  10. Prepare of chili powder mirch red /lal powder.
  11. You need of turmeric haldi powder/.
  12. Prepare of asafoetida of a generous /hing.
  13. It's of sugar sugar or powdered or add as per taste.
  14. Prepare of oil for tempering.
  15. You need of salt.
  16. Prepare of oil for deep frying.

Chiwda/Poha Chivda Recipe step by step

  1. First rinse the curry leaves, cashews and raisins..
  2. Dry them in a clean kitchen towel..
  3. Measure all the ingredients and keep them separately in a plate or bowl..
  4. Heat oil for deep frying in a kadai or wok..
  5. Take a fine sieve with a handle..
  6. Place half of the poha or rice flakes in it..
  7. Immerse the sieve with the poha in the medium hot oil..
  8. Fry till they expand and become crisp..
  9. Don't brown them..
  10. Remove the fried poha on a plate lined with paper towel..
  11. Place the sieve on a dry plate..
  12. Add the remaining poha in it..
  13. Again keep the sieve with the poha in the hot oil and fry till they are crisp..
  14. Drain them in the same plate..
  15. Next add the chana dal in the sieve and fry them for some seconds till they become crisp..
  16. Drain on another plate..
  17. In the same way fry the peanuts, cashewnuts, raisins, coconut slices and curry leaves..
  18. Keep all of them separately in a same plate or in separate plates or bowls, lined with paper towels..
  19. Heat 1 tsp in another pan. first add the mustard seeds. let the mustard seeds pop..
  20. Then add the cumin and sesame seeds. let the sesame seeds pop and change color..
  21. Switch off the flame. add the turmeric powder, red chili powder, asafoetida..
  22. Stir and now add sugar and salt..
  23. Stir and switch on the flame and add all the fried ingredients - poha, peanuts, raisins, cashews and chana dal. stir well..
  24. Crush the fried and crisp curry leaves and add them to the mixture..
  25. Stir well and roast for 2-3 minutes on a low flame. continue to stir in between..
  26. Check the taste and then add more salt or sugar or red chili powder if required..
  27. Let the chivda mixture cool and then store in an air-tight box and container..
  28. Serve the poha chivda as a tea time snack..
